Lemon Garlic Chicken Tenders in the Ninja Foodi

Lemon, fresh garlic, and fajita seasoned chicken tenders cook up quickly, these are perfect for a fast and healthy meal.

Ingredients:

  • Chicken tenderloins (tenders)
  • 1/2 of a large lemon, juiced
  • 1 teaspoon garlic powder
  • Kinders fajita seasoning, sprinkle on as much as you would like
  • 2 Tablespoons of Avocado oil
  • 1 Tablespoon of good butter
  • Fresh parsley, for garnish

Instructions:

  • Preheat the sear plate in the Ninja Foodi and plug in the Temperature Probe.
  • While the Sear plate preheats, toss the tenders in the avocado oil, garlic powder, and lemon juice. Sprinkle with fajita seasoning.
  • When the sear plate is ready, add the butter to the sear plate. Put each chicken tender on the sear plate, dipping each in the melted butter to prevent sticking, plus for flavor. Place the temperature probe in the widest part of the last chicken tender before placing it on the sear plate.
  • Hit the “Preset” button and turn the dial to the “Chicken” setting. Then select the “Doneness” button and turn the dial to select “well”.
  • At around 140 degrees, flip the chicken tenders to get color on both sides. The Ninja Foodi will shut off at 165°, that is when the chicken will be perfectly cooked.

Lemony Garlic Butter Roasted Shrimp

My husband made this shrimp roasted in lemony garlic butter. It was delicious! The lemon, butter, and garlic are a classic that packs a flavorful punch. You and your family will love these shrimp!

Ingredients:

  • 2 pounds of Shrimp, deveined, and either fresh, or thawed from frozen, shells on for flavor
  • 4 whole garlic cloves, to roast with the shrimp, and an additional 6 cloves of garlic, crushed in the butter mixture
  • Sea salt and pepper, to taste
  • 1 stick of salted butter
  • 1 half of a large lemon, juiced
  • Parsley, if desired, for color

Instructions:

  1. Preheat oven to 400°,
  2. Place shrimp and 4 whole garlic cloves on a foil or parchment lined baking sheet. Season with salt.
  3. Melt butter in a skillet on medium high heat, Add in the six cloves of crushed garlic. Add pepper, if desired. Next, add in the juice of half of a lemon. Add parsley, if desired, for color.
  4. Pour lemon, butter, and garlic mixture over the shrimp. Roast in the oven for 15 minutes and it’s ready!

Vegetarian Street Taco Bowl

Lime, garlic, and bell pepper rice and chipotle black bean crumbles star in this filling vegetarian street taco bowl. Add your favorite taco toppings and you have a hearty and satisfying meal that took no time at all.

Ingredients:

  • Kinder’s Mains Street Taco Bowl with Lime and Garlic Rice
  • Morningstar Farms Chipotle Black Bean Crumbles
  • Parsley Flakes, 1 Tablespoon
  • 4 Tablespoons of olive oil, or a neutral vegetable oil of your choice, 2 Tablespoons per pan
  • 1 medium red onion, diced
  • 1 plum tomato, diced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 teaspoon of garlic paste
  • 1 and 3/4 cups of water

Possible Toppings:

  • Sharp cheddar cheese, shredded, I used Cabot’s Aged 5 Years Sharp White Cheddar
  • Grape tomatoes, sliced in half
  • Jalapeños, picked or fresh
  • Scallions or onion, diced fine
  • Salsa, I used Good and Gather Cantina Style Salsa from Target
  • Sour Cream, I used Cabot’s Brand, it’s yummy!
  • Guacamole or avocado
  • Fritos, corn chips, or tortilla chips, for crunch
  • Beans, refried, or your bean of choice
  • Fresh cilantro
  • Fresh diced mango would be so good!

Instructions:

  1. Heat a skillet on medium high heat and add 2 tablespoons of olive oil to the pan. add in the onion, tomato, yellow, and red bell peppers. Briefly Saute. Add in the garlic paste and sauté for a minute or two.
  2. Heat a separate skillet on medium high heat and add 2 Tablespoons of olive oil, and add in the Morningstar Farms Chipotle Black Bean Crumbles. Add in parsley flakes for color and cook until heated through.
  3. Add in the lime and garlic rice packet and sauté for a minute or two.
  4. Next, add in the water and bring to a boil. Once bubbling, bring the heat down to low and cover. Simmer the rice and vegetable mixture for 20 – 22 minutes.
  5. Next, remove from heat and let sit, covered, for 15 minutes.
  6. Uncover the rice and fluff with a fork.
  7. Add the rice and veggie mixture to the bottom of a bowl. Top with the MorningStar Farms Chipotle Black Bean Crumbles.
  8. Next, add preferred taco toppings. I added grape tomatoes, cheddar cheese, sour cream, salsa, jalapeños, scallions, and Fritos for crunch. Yum!!

Everything Bagel Seasoned Pigs in a Blanket

Just 3 ingredients, crescent roll dough, beef smokies, and everything bagel topping, and you have a delicious meal or appetizer! This is a real family pleaser, serve it with your favorite dipping sauces.

Only 3 Ingredients:

  • 1 tube of Pillsbury crescent rolls
  • 1 package of Old World Beef Smokies, I used Land O Frost brand
  • Everything Bagel Topping, I used King Arthur Flour brand

Instructions:

  1. Preheat the oven to 350°. Line the baking sheet with parchment paper.
  2. Roll out the crescent roll dough and separate each triangle. Next, separate each individual triangle at the widest point into two triangles.
  3. At the widest point of each triangle, wrap the beef smokie into the little blanket of dough, starting with the widest point of dough and roll to the smallest point of the triangle.
  4. Continue this process until you are out of dough triangles.
  5. Next, dip or roll the dough wrapped beef smokies in everything bagel topping.
  6. Bake in a 350° oven for 12 minutes., or until dough is golden brown.
  7. Serve with your favorite dipping sauces, if desired, such as mustard or honey mustard. Or, eat as is!

Cheesy Garlic White Pizza

Garlic butter parsley oil is brushed on to fresh pizza dough and topped with fresh cheeses and basil. Pizza night has become next level!

Ingredients:

  • Frozen Pizza Dough, I used Aldi’s Mama Cozzi’s brand frozen pizza dough
  • Avocado oil, enough to coat frozen dough to keep it from sticking, use a neutral flavored oil
  • 2 Tablespoons of butter, I used President’s Brand butter
  • 1/4 cup of avocado oil
  • 2 fresh garlic cloves, crushed
  • Pinch of garlic powder
  • 1 teaspoon of Parsley flakes
  • Sea salt, to taste
  • 1 package of Belgioioso Brand Mozzarella Parmesan “Secret“ Pizza Blend Cheese, I used half of a 16 ounce bag per pizza
  • 4 Fresh mozzarella slices, hand torn
  • Italian seasoning to top the pizza
  • 3 to 4 Fresh Basil Leaves, torn, for garnish

Instructions:

  1. Coat the frozen pizza dough with oil and defrost in the pizza pan. Top with plastic wrap to avoid dry dough. Let the dough defrost in a warm place. I often put my stove on warm mode and place the pizza pan on the back of the stove for fast defrosting.
  2. When dough is ready, press on top of the plastic wrap from the center out, pressing it to the edges of the pan.
  3. Preheat the oven to 500°.
  4. Make the butter garlic parsley oil base. In a small sauce pan add the butter, avocado oil, crushed garlic, garlic powder, parsley flakes, and sea salt on low heat. Do not burn the garlic. Once garlic is fragrant, you are ready to make the pizza.
  5. Use a pastry brush to spread the butter garlic parsley oil to the top of the fresh pizza dough.
  6. Top with the cheeses and Italian seasoning.
  7. Bake in a 500° oven for 13 to 15 minutes or until pizza is bubbly, cheese is melty, and crust is done. Garnish with fresh torn basil.

Irish Soda Bread

A slice of warm Irish Soda Bread with Irish butter and a hot cup of tea is a wonderful way to start the day.

Ingredients:

  • 3 cups of Flour
  • 2/3 cups of Sugar
  • 3 teaspoons of Baking Powder
  • 1 teaspoon of Salt
  • 1 teaspoon of Baking Soda
  • 1 1/2 cups of Buttermilk
  • 1 Tablespoon of neutral oil, I used avocado oil
  • 2 eggs, beaten
  • 1 cup of Currants
  • 1 Tablespoon of Vanilla Extract

Instructions:

  1. Preheat oven to 350°. Line the baking pan with parchment paper, I used a cast iron pan.
  2. Mix together the dry ingredients, the flour, sugar, baking powder, salt, and baking soda.
  3. Mix together the wet ingredients, the buttermilk, oil, and egg.
  4. Combine the dry and wet ingredients.. Add in the currents and vanilla extract.
  5. Bake at 350° for 45 to 50 minutes. When a toothpick comes out clean, the bread is done.
  6. Serve with delicious Irish butter. Jam would also be delicious.
